Objective: Chart a path to level an Infiltrator starting from Level 1 with the goal of completing the run on Insanity.
Bonus Power: Because I lack imagination, I will use Assault Rifles as the stand in bonus. You could substitute Shotguns if you like. You can argue Infiltrator does not necessarily need another weapon talent though. AI Hacking is a popular choice, although I would be more inclined to go with 1 point Medicine. I don’t like the fit of biotics on Infiltrator, but Lift could be situationally useful. Persuasion: You know the drill; I like to pass the checks. That means I invest 6 points in Intimidate and take 4 freebies for 10 (which passes nearly all checks, eventually). I will mention some of the checks that you may not pass if you run into them before this build path can pass them. Largely I will try to give the option to pass checks that derive some benefit, or can cut down on tedium. You are passing all the worthwhile plot checks though. Assumptions: As with the other ones I wrote, I am assuming XP bonuses from achievements. This only really matters with regard to plot points that I point out along the way, although it may also mean that if you don’t make a level before a few of the early fights the game might be tougher for you. There should be some buffer, and there are some alternate paths you can take early game that are a little easier if you are having too many problems. I will try to mention them. Miscellaneous: The hybrid classes in ME1 are interesting in that they can potentially be built as “better” versions of one of the pure classes. Take Infiltrator and add AR’s for a “better Soldier,” or add Hacking for a “better Engineer.” Since there are a lot of useful powers, points feel a little tighter. There has to be some compromise. As with the other posts, this is just a general roadmap and is not intended to be a proclamation of the only way to build the Infiltrator. It may not even be the most 'infiltratory,' but it will be balanced. As an interesting bit of trivia, I did end up altering this slightly after my ME1 Minimalist Infiltrator run.
If equipped with a motion damping upgrade like the Kinetic Stabilizer, the sniper rifle can be an unrivaled killing machine. Sniping is fun, but be sure you have a few intergalactic measurement units between you and any targets before you equip it as it's useless at close range.

I've been playing through Mass Effect 1 (ME) on the higher difficulties for achievements, and I keep running into sniper enemies who 1-shot me.
Any hints to surviving and/or killing the snipers before they kill me?

Surviving: look for red 'sniper lining up shot' beams targeting you or close to you and then quickly duck into cover.
I don't think there's anything else you can do. IIRC you can survive one shot if you have fairly powerful armour.

Since it hasn't been emphatically mentioned in any answer or the details of the question I'd like to point out that you can equip higher grade armor and you can equip upgrades to the armor. Having your strongest armor and upgrade configuration equipped will help defend you from one shots.

Side note: I favor the 'Medical' armor upgrade in most cases.

In addition to Rup's answer, it's worth mentioning that snipers will often wait to pick you off once your shields have been taken down by other enemies (or so it seems). How to turn up brightness on dell. If there are snipers around it's worth being extra careful about taking cover when your shields are low.
Also, I find rockets one-shot me a fair bit. Especially when they've shot at me without me noticing as I duck into cover. The rocket reaches my cover as I step back out and BAM.

I'm looking for some guidance here before I decide that he Mass Effect trilogy is not worth playing because of the poor combat system.
I love playing a sniper build in most games, so I went infiltrator in this game. I've maxed out sniper rifles, some points in pistols, and a few elsewhere.
Despite this, whenever I pull out my sniper rifle and start aiming, it is clear that Commander Shepherd has been drinking on the job, and HEAVILY. How is it that I have maxed my points in sniper (foregoing much needed armor points due to the clunky 'automatic hide' system that constantly gets my killed) and yet the accuracy is pitiful. For a gun that only has one or two shots, I feel like I should be able to make them count.
Is this not a viable build in this game? What am I doing wrong?

As someone who played an infiltrator in Mass Effect 1 (for the whole series actually) I found one way to offset this issue on PC was to adjust the mouse sensitivity when sniping. In my case, I own a gaming mouse that can alter it's DPI (effectively sensitivity) by pressing a button on the mouse. By setting it to a lower DPI (less movement in game to real mouse movement) I had better luck stabilizing the sniper rifle when lining up shots.
If you are on PC you could use either a mouse with DPI switching buttons (most gaming mice have them these days) or use AutoHotkey to set up a key/button to change your sensitivity. If you're on console you're probably out of luck regarding this solution.
Additionally, weapon mods and the more advanced snipers you acquire later in game eventually make the swaying almost nonexistent. Crouching and the Assassination ability also help quite a bit once you put levels into Assassination.
